- Any root veggie you can find.
- Potatoes of all colors
- Butternut squash
- Brussel sprouts
- Olive oil
- Salt, pepper, garlic powder
- Preheat oven to 375 degrees
- Dice all the veggies and place on a cookie sheet.
- Drizzle olive oil, salt, pepper and garlic powder and toss the veggies.
- Place in preheated oven and roast for 45-60 minutes. Be sure to toss the veggies periodically.
